Hideyo Yamada is originally from Tokyo Japan and is a trained sushi chef. After working at various restaurants in Japan and New York, she became interested in combining the healthy elements of vegan, gluten-free, and modern Japanese cooking. After moving to United States, she attended the Institute of Integrative Nutrition in New York City where she studied holistic approach to nutrition and received her Holistic Health counselor accreditation from the American Association of Drugless Practitioners. From 2011 to 2012, she attended the Natural Gourmet Institute 619 hour chef training program in New York City, where she studied healthy nutrition from around the world. The Natural Gourmet Institute is Accredited by ACCET (Accrediting Council for Education and Training). While attending the Natural Gourmet Institute, she was working as a private chef and teaching classes focusing on fusing ingredients of different cuisines to create foods that restore human health.
